What’s a pancake smoothie
I had come across the term ‘Blender Pancakes’ while browsing through Pinterest the other day which got me intrigued. It’s basically whipping up a pancake batter in a blender. That got me thinking. If one could do that, then why not use the blender to make a pancake smoothie? You get a pancake smoothie when you put all the ingredients needed to make a delicious pancake minus the flour and eggs into a blender to make a deliciously creamy smoothie instead! Isn’t that something now! For this, I had to ensure that the flavors/ingredients I use, remind me of pancakes. Blueberry pancakes are what came to my mind first, and that is how Vegan Blueberry Pancake Smoothie was created! Also, I wanted to make a vegan smoothie, so I used homemade Almond Milk for this recipe. Plus, smoothies made with almond milk are considered one of the best plant-based alternatives that also tastes great! Making pancakes in the morning can be time-consuming which is why this classic pancake-flavored smoothie is a preferred choice. This recipe strikes the perfect balance of being both wholesome and tasty. It is so easy to make that anyone can make it!

I always have blueberries in my fridge because both of us love this fruit. I use it in our smoothies or in summers, I make Blueberry Masala Soda Popsicles. Blueberry Banana Almond Milk Smoothie this is a blender recipe, you, of course, need a blender to make this one! Pic 1 - Add almond milk. Pic 2 - Then add blueberries. You can use fresh or frozen blueberries here. Pic 3 - Followed by old fashioned oats. Oats add texture and fiber to the smoothie.
Pic 4 - Next add the raw cashews. Pic 5 - Add dates. I have used dried dates, but you can use organic Medjool dates. Pic 6 - Then add the protein powder. I added Vegan Milk Masala instead of store-bought protein powder as its more nourishing and free of preservatives. Pic 7 - Lastly add cinnamon powder and a sliced banana. Pic 8 - Blend it until its smooth and creamy. Pour this Blueberry Banana Almond Milk Smoothie in serving glasses, throw in some fresh blueberries as a topping, and then serve it immediately or chilled.
Top tips for making this recipe
Feel free to use frozen or fresh blueberries and banana for this recipe. Ensure that the banana is fully ripe. I enjoy making my smoothies with almond milk but if you don’t have almond milk, you can use any milk available to you. You can also add ¼ teaspoon of ginger powder along with the cinnamon for more flavor. This smoothie with Dates and banana should already be sweet enough. But you can also add maple syrup to make it sweeter. If you want, you can also skip adding protein powder. Sneak in some greens like spinach or kale for extra vitamins and minerals. Throw a frozen waffle in the blender for a more authentic/indulgent flavor. You can easily double or triple the recipe to make more servings.
