This post has been sponsored by Frito-Lay. All thoughts and opinions are my own.  If you’re going to be hanging out on the lake on a lazy summer day, you gotta bring along something to snack on. Jumping in and out of the water builds up a bit of an appetite. It isn’t like you can easily serve up a three-course meal on a lake boat, and who would want to anyway? You want something easy to make, something portable, something you can dig into, something everyone will love. Don’t worry. I got you covered.  Patty goes insane for Doritos, and I enjoy them because of the variety of bold flavors available. You already know how much we love BOLD FLAVORS! Today I’m serving our dip with Spicy Sweet Chili Doritos, though you can use your favorite. This recipe only includes 6 ingredients. This is all you need… Try my Homemade Cajun Seasoning blend for this. And, I mentioned it would be EASY, right?

Spicy Cajun Dip Ingredients

Red Bell Pepper. 1. Plain Yogurt. ¾ cup. Mexican Crema or Sour Cream. ¼ cup. Garlic. 2 cloves, minced. Green Onion. 2 tablespoons, chopped. Cajun Seasonings. 1 tablespoon. Bag of Your Favorite Doritos. For serving.

We have some information you can follow – How to Roast Chili Peppers – but in a nutshell, set your oven to BROIL. Slice the red bell pepper in half down the middle and place them skin sides up on a large baking sheet. Set them into the oven beneath the broiler, about half way down in the oven, not too close to the heating element. Let the peppers roast about 15 minutes, or until the skins blacken and bubble up. Remove them and let them cool a bit. Like so… Process it up and BOOM! Just about done! Consider this recipe for any of your summertime gatherings – think Memorial Day or Fourth of July. We all need quick and easy recipes. This is one that surely delivers. Keep it in your back pocket for when you need a bold and tasty recipe, STAT! Enjoy!
