Prep ahead: The cookie dough can be covered and chilled in the refrigerator for up to 2 days or the balls can be rolled, placed on a baking sheet, covered and chilled for up to 3 days. Bring to room temperature before baking. Storage: Sugar cookies can be stored in an airtight container at room temperature for up to 7 days (if they last that long😉). If you wish to extend the shelf life, store sugar cookies in an airtight container in the refrigerator for up to 2 to 3 weeks, however, this can slightly dry out the cookies. To freeze sugar cookie dough: Roll balls but don’t coat in sugar. Fit as many as you can on a parchment/nonstick lined baking sheet without touching and flash freeze until solid, 1-2 hours. Transfer the dough balls to a freezer size plastic bag and freeze for up to 3 months. Thaw overnight in the fridge or for 30-60 minutes at room temperature, then bake as directed. To freeze sugar cookies (frosted or unfrosted): Fit as many cooled cookies on a parchment/nonstick mat lined baking sheet without touching and flash freeze until solid (about 1 hour). Transfer cookies to a freezer size container with sheets of parchment in between any layers. Freeze for up to 3 months. TO EAT, remove any parchment paper and let the cookies sit at room temperature in a single layer until thawed completely.
