We’re making some amazing Prime Rib Sandwiches in the Chili Pepper Madness kitchen today, my friends. We’re talking comfort food extraordinaire. These sandwiches are incredibly satisfying, and I’m sure you’re going to love them. If you have any leftover prime rib in your home from the holidays or other special occasion, this is one recipe you seriously need to make. We have thin slices of prime rib piled high on crusty buns, topped with melty cheese, lots of roasted poblano chilies and a creamy garlic mayo, just for you. We both took a first bite and sort of melted in our chairs from delicious awesomeness. But then again, they ARE made from super tender, amazing prime rib. CRAY GOOD. Making it is an easy enough thing. You’ll chop up the cooked prime rib or cooked ribeye - I just did a rough chop on mine. Heat it up in a pan and add in a bit of stock and seasonings. The stock will bring some delicious moisture to the finished sandwich, and will help infuse all those new seasonings. Pop it onto a couple buns - I used crusty bolilo buns, though any thick bun will do - and top it with shredded pepper jack cheese and chopped roasted poblano peppers. If you don’t know how to roast a poblano pepper, instructions are below, or see here - How to Roast Chili Peppers. Bake the newly stacked sandwiches for a few minutes to let the cheese get nice and melty and the crusts just slightly toasted. Top them with garlic mayo and BOOM! You will LOVE this sandwich! Let’s do this! How to make prime rib sandwiches, my way!

How to Make Prime Rib Sandwiches - the Recipe Steps
Prepare Your Prime Rib. Roughly chop the prime rib and add it to a pan or skillet over medium heat with olive oil. Heat it through about a minute. Add the Cajun seasoning and stock. Stir and simmer until the stock reduces and the prime rib is nicely coated with seasonings. Roast the Poblano Pepper. Roast the poblano pepper over an open flame, flipping often, until the skin chars and blackens. You can also roast it in the oven or broiler. See How to Roast Chili Peppers. Wrap the poblano in paper towel until it cools, then peel off the charred skins. Finely dice the poblano. Get the Sandwiches Ready. Heat the oven to 350 degrees F. Slice open the buns and stuff them with prime rib. Top with shredded cheese and poblano peppers. Set the sandwiches onto a baking sheet and bake them for 5 minutes to allow cheeses to melt and get the bread a bit crusty and golden brown. Make the Garlic Mayo. Mix the mayo and garlic powder and top your sammiches! Enjoy! Boom! Done, my friends! What do you think? It’s the ultimate leftover prime rib sandwich. It is super quick and easy to make when you have leftovers. Go for it! I hope you like it. Let me know how it turns out for you. Send pics! And as always, feel free to share.
