Be it breakfast, brunch, dessert, or even dinner, indulging in a plate of sweet or savory fluffy waffles is one of the best ways to treat yourself. You don’t need eggs or dairy to make them either, hearty vegan waffles are easy and you won’t even notice the difference in the taste. They are very easy to make. That’s why I am always creating new and exciting savory recipes that can be served as a meal at any time of the day. After seeing the success of Dosa waffles, here’s another savory vegan gluten-free waffles recipe that I created using leftovers! It’s similar to potato dosa or pancakes. In my opinion, these are the best waffles you can have! The texture is exactly what I want in a waffle. They’re perfectly crisp on the outside, with a warm soft center! These fluffy potato waffles will quickly become a family favorite. Easy savory vegan snacks like these when served are sure to make your dining table an inviting sight! In fact, you can also use frozen (thawed) shredded hashbrown potatoes to save time. You will have to adjust the cooking time accordingly. They will take a bit longer to cook. Flours - Gluten-free All-purpose flour and rice flour are the two kinds of flour needed in this vegan waffles recipe. Hummus - I have used plain gluten-free hummus here. You can either make it at home or use a store-bought one. You can also use flavored hummus here. Vegetables and herbs - onions and cilantro are what I have added. Feel free to add more veggies of your choice. Spices - peppercorns, red pepper flakes, Italian seasonings, and garlic are the basic spices you will need. Vegan butter - Use any dairy-free butter you have. For extra flavor, use herb butter or Thecha butter. Besides these ingredients, you will also need a waffle maker. I have been using it for years.

Then you can serve these instant mashed potato waffles with some Sriracha, vegan mayo, sour cream, ketchup, hot chili oil, applesauce, pesto, salsa, or chutney on the side. Serve these waffles with a side of fruit salad, avocado, guacamole, Cucumber Salad, soup, or a bowl of yogurt sauce (plain yogurt, dried garlic, cumin powder, and salt). You can make and serve these easy vegan waffles for breakfast, as a snack, or as the main course. They are so tasty and filling, that you love them any time of the day! If your butter is salted and even your hummus has salt, add salt to the batter accordingly. Instead of water, you can also use buttermilk or chaas. You can also add baking powder to the batter to make it more soft and fluffy. If you do add it, allow the batter to rest for 10 minutes.  Instead of using cheese as a topping, you can also mix it into the batter.
