Hoba Miso With Beef

When we were in Toyama and Takayama this past summer, one of the dishes that I truly fell in love was Hoba Miso (朴葉味噌). This is a local food from Hida region in Gifu prefecture. “Hoba” means a magnolia leaf in Japanese and the dried hoba leaf is soaked then used to cook the sweet miso mixture over fire. This is such a humble dish, yet it tastes so amazing I remembered the experience as if I just ate it yesterday....

Always happy to talk curry with you. Time to get cooking! Keep it spicy. The thing you need to understand about the term “curry” is that while it is typically associated with Indian cooking and cuisine, it is a term invented by the West that doesn’t actually refer to any specific Indian dish....

Japanese Ume Plums

Ume (梅, うめ), plums, or Japanese apricots, grow on large, broad-leaved trees with a short growing season. The young bright green fruits are slightly smaller than a golf ball and green to yellowish-green in color. When ripe, they have a beige-peach flush. They are not for eating but are used to make condiments, pickles, and drinks such as Umeboshi (pickled plums), Japanese plum wine (Umeshu), Ume miso, and more. It’s a well-known superfood high in citric acid but is on the decline among the younger population....

Karaage Rice Bowl

Every now and then, I find myself in a situation where take-outs seem like a reasonable resort to a weeknight family dinner. What do you do to feed your family on a day like this? Mini Oreo Truffle Cakes

I was in the car the other day (on my way to the store) brainstorming about an eggless easy treat that I could put together for a Valnetine’s party for the girls that a friend of mine was hosting.
