PORK FAJITA RECIPE

I am slightly obsessed with fajitas.  From my Chicken Fajitas, Crockpot Chicken Fajitas,  Steak Fajitas, Shrimp Fajitas, Sheet Pan Fajita Salmon, and on and on, I can’t get over the combo of tender, Mexican spiced meat and crisp tender charred bell peppers slathered in luscious sour cream all wrapped in a warm tortilla – its textural palate pleasing bliss.  So after I made my Salsa Verde Honey Lime Pork recipe, I knew just what to make next – Pork Fajitas! My Salsa Verde Pork in this Pork Fajita recipe is based off of my Slow Cooker Honey Lime Salsa Verde Chicken.   It is one of my favorite and most popular recipes so I knew it would make an equally tantalizing, and even more juicy pulled pork version.  This Honey Lime Salsa Verde Pork did not disappoint – it is mouthwatering tender and dripping with tangy fiesta flavors and pairs beautifully with the fiesta spiced crispy bell peppers.

TIPS AND TRICK TO MAKE PORK FAJITAS

Cast Iron Skillet.  A cast iron skillet will give you the best char for restaurant style bell peppers.  If you don’t own a cast iron skillet, make sure your pan is sizzling hot before you add your bell peppers. Bell peppers.  You can use whatever combo of peppers you like.  You can even add more peppers if you prefer. Pineapple.   Try adding pineapple to you fajitas  –  it adds a delightful, juicy freshness. Spice it up.  The spice level as written is not very spicy, just flavorful.  I love to add hot sauce to my individual Pork Fajitas – I think it really makes the flavors pop. Lime.  Don’t forget the lime!  The lime brightens and enlivens the earthy fajita flavors.

Can I use different meat for Pork Fajitas?

Yes!  You can swap the pork for Mexican Chicken, Carnitas, Chipotle Pork, Beef Barbacoa or any of your favorite Mexican protein then follow the same directions for cooking the bell peppers.

Can I add Bell Peppers to the Slow Cooker?

I personally prefer cooking my bell peppers in a cast iron skillet for this Pork Fajita recipe to infuse them with more flavor and develop that wonderful characteristic fajita char, but you can add them directly to your slow cooker for the ultimate easy Pork Fajitas. As far as how long to cook peppers in the slow cooker, DON’T believe other slow cooker fajita recipes (or any slow cooker recipe) that tells you to add the bell peppers at the beginning of the recipe – you will end up with a pile of mushy peppers. Instead, add the bell peppers the last 30-45 minutes of cooking then cook on HIGH.   The time range is due to the variance in slow cookers and how crisp-tender each reader likes their peppers.

WHAT TOPPINGS GO WITH PORK FAJITAS?

These Pork Fajitas don’t need much by way of toppings because they are already bursting with flavor.  My favorite way to serve them is piled in corn tortillas (I know flour tortillas are pictured – but trust me!), my Salsa Verde Ranch Crema (its Amazing!) and hot sauce. If you don’t want to make the crema, you can just use sour cream or Greek yogurt, but please don’t skip the tangy creaminess in some form!  The rich, robust flavors of the Pork Fajitas need the cool refreshing, creaminess to marry all the flavors together. Other favorite Pork Fajita toppings include:

WHAT SIDES SHOULD I SERVE WITH PORK FAJITAS?

These Pork Fajitas are practically a meal-in-one, but everything is better with beans and either Mexican Rice or Cilantro Lime Rice.  You can also serve with a big green salad, Corn Salad with Cilantro Lime Vinaigrette or Southwest Salad and either Perfect Fruit Salad with Honey Citrus Dressing or Pina Colada Fruit Salad,  and of course you will be everyones’ hero if you serve Churros for dessert!

HOW SHOULD I SERVE PORK FAJITAS?

Soooo many possibilities when it comes to how to serve Pork Fajitas for a new dinner with the same pork!

Pork Fajitas: Serve the pork, and bell peppers wrapped in tortilla with sour cream, salsa/pico de gallo, fresh lime and hot sauce to taste. Pork Fajita Salad: Toss the pork and bell peppers with lettuce, corn, black beans, pepitas/sunflower seeds, cheese and/or tortilla strips then drizzle with Tomatillo Avocado Ranch or Cilantro Lime Dressing. Pork Fajita Quesadilla: sandwich the pork and bell peppers in a flour tortillas and smother with cheese and bake, grill or melt cheese on the stove.  Serve with a healthy dose of sour cream, salsa and guacamole. Pork Fajita Burritos:  Layer a large tortilla with pork, bell peppers, rice, black beans, lettuce, sour cream and guacamole and wrap up burrito style. Pork  Fajita Burrito Bowl: Pile the pork and bell peppers on a bed of rice with black beans, lettuce and tortilla chips with condiments of choice or Tomatillo Avocado Ranch.

Can you Make Pork Fajitas in Advance?

Prep Vegetables ahead:  While your pork is slow cooking, you can slice all your bell peppers and onions in advance so all that’s left to do is cook for 10 minutes or so. Cook Vegetables Ahead:  Alternatively, you can cook your onions and bell peppers in advance so you just have to warm them in the skillet or microwave when the pork is done.   Make sure you don’t overcook your bell peppers the first time so they stay crisp-tender when reheated. Make Pork Ahead:  You can also make the Salsa Verde Pork entirely in advance and reheat for these Pork Fajitas.

Can I freeze Pork Fajitas?

You can freeze the pork but you cannot freeze the bell peppers or they will become mushy when reheated. To freeze pork:

Let pork cool completely. Divide pork into desired servings size among freezer bags, keeping some of the juices. Squeeze out excess air, seal and label. Freeze pork for up to 3 months. When ready to serve, thaw overnight in the refrigerator. Reheat on the stove top until warmed through.
