The result is a creamy side dish or meal addition that explodes with taste and satisfies in just the right way. Let’s talk about how to make refried beans, shall we?
1 tablespoon olive oil (or use lard, which is more traditional) ½ small onion, chopped 1 jalapeno pepper, chopped 1 clove garlic, chopped 1/2 teaspoon chili powder ¼ teaspoon ground cumin (if desired, not traditional, but very tasty) Salt taste (I use about ¼ teaspoon) 1.5 cups cooked pinto beans (drained, if using canned) 1/4 cup water 1 teaspoon lime juice 1 tablespoon hot sauce (if desired – chipotle in adobo is a great option as well, or use homemade ranchero sauce)
Add the garlic, chili powder, cumin and salt. Cook for another minute, stirring. Next, add the beans and water. Give the whole mix a stir and cover. Cook for 5 minutes to heat up the ingredients and to let the flavors mingle and develop a bit. Next, mash the beans with a fork or a potato masher to your desired consistency. I like mine slightly chunky, so I will mash one half of the dish more finely, then will mix the two sides together. Stir in the lime juice and hot sauce, if desired. Makes about 2.5 cups BOOM! DONE! Simple, right? Check out these beans. So tasty! And quite quick to the table. To me, this is the best way to make refried beans. And the easiest! Also, canned beans are perfectly acceptable for making homemade refried beans. However, if you prefer to start from dried beans, feel free. Absolutely. Just be sure to soak and soften the beans properly before working with them. The results will be delicious either way. Feel free to add in more jalapeno peppers if you’d like an even spicier version, or use a serrano pepper or habanero pepper instead. Also, your choice of hot sauce can really make a difference in the overall heat level, so choose accordingly. Your choice of seasonings is key as well. I’ve included a bit of chili powder, cumin and salt for this recipe. Feel free to incorporate others, such as spicy cayenne, paprika, smoked paprika or more. Ghost pepper powder, anyone? That will make you some seriously spicy beans!
