When the weather takes a cooler turn and the weekends fill up with game day gatherings, we can’t help but get a little excited about the menu. I’m even more excited because I already know what I’m bringing to the next gathering – This Easy Cheesy Chipotle Bean Dip. There are only 5 main ingredients plus some garnish to top it all off, and the secret ingredient that makes this bean dip truly stellar is Brooks Chili Beans. So yeah! I’m in! What are we waiting for? Shopping is done, so let’s get cooking! And eating… You’ll get all that huge flavor from the beans. Don’t they look great? I used the mild Brooks Chili Beans for this recipe, but try it out with the hot beans if you’d care for a bit more heat. Simply add all of the ingredients to a food processor and process until it is as smooth as you like it. You’re already almost done. Go ahead and pour the processed dip into an oven safe pan and top it with shredded cheese. Finally, bake the whole thing in the pan at 350 degrees F for 15-20 minutes, just until the dip is nice and hot and the cheese is perfectly melty. You don’t have to! But, I’m one of those presentation cooks, always trying to make things look a little bit special. Serve it up with chips during the game and watch it disappear. Believe me, it will go FAST, so you may want to make a double batch! I hope you enjoy the dip!
